Mrs. LeMaire's Caramel Cake
Ingredients
Cake
- 1 package of Duncan Hines Yellow Cake Mix
- 4 eggs
- 1 envelope of Dream Whip
- 1 cup of water
- 1/2 cup of vegetable oil
Caramel Icing
- 2 cups of sugar
- 1/2 pint of whipping cream (room temperature)
- 1 stick of butter
- 1 tsp of vanilla
- 2 tbsp of evaporated milk
- 1/2 cup of warm water (if needed)
Tools
- Large mixing bowl
- 2 9-inch round pans
- Heavy skillet
Instructions
Cake
Mix all ingredients in a large bowl.
Blend at low speed until moistened.
Mix at medium speed for 3 minutes.
Pour mixture between two round pans.
Bake for 40 minutes at 350 degrees.
Set aside and let cool.
Caramel Icing
"On a cold day, if possible."
Place sugar in heavy skillet over low-medium heat until melted and brown, stirring constantly.
Remove from heat and very slowly add remaining ingredients - except vanilla.
(hard part!) Place back on stove over medium heat, stirring occasionally, until "soft ball" stage.
Remove from heat.
Add vanilla and place in a sink with cold water. Beat until "right consistency" - it will harden as it cools.
Spread on cooled cake and place in the refrigerator.
